Summer granola yogurt bowl

A fresh summery yoghurt bowl served with homemade super seedy granola, perfect for brekkie or late afternoon snack.


Granola Ingredients

  • 1 cup rolled oats

  • ½ cup pumpkin seeds

  • ½ cup sunflower seeds

  • ½ cup flaxseeds

  • ½ cup coconut flakes

  • ¼ cup coconut oil

  • ¼ cup date syrup or raw honey

  • 1 teaspoon ground cinnamon

Other Ingredients

  • Coconut or greek yoghurt

  • Fresh berries : raspberry, blueberry, strawberries, blackberries

  • Chia pudding


Preheat oven to 200 °, gas 5.

Line a baking tray with parchment paper. Combine all ingredients together in a bowl. Spread evenly onto the tray and then bake for 8 - 10 mins. Take out, mix around the granola to get evenly cooked and place back in oven for 5 mins more. Take out and let fully cool down for 15 minutes. Place into a glass container for up to 4-5 days.

Serve up: Coconut yoghurt with some chia pudding, fresh fruit, granola and nut butter. A fresh delicious well balanced breakfast.
