Guacamole Avocado toast

This delicious and easy to prepare brunch dish combines a whole load of fresh flavour as well as healthy fats from our avocado paired with wholegrain sourdough toasted slice.

Ingredients

  • 1 whole avocado

  • 2 spring onions

  • ½ cup cherry tomatoes

  • whole fresh lime squeezed

  • ¼ teaspoon salt and pepper

  • wholegrain sourdough bread

  • optional toppings : radishes, boiled eggs, toasted nuts and seeds, micro greens.


In a bowl, scoop out the avocado from the skin and mash together with a fork until a creamy consistency has been reached. Wash and finely dice the spring onion and cherry tomatoes and place them into the bowl. Squeeze over the fresh lime juice and season with salt and pepper. Stir to combine.

Add to your toasted slice of sourdough and top with the guacamole avocado spread. Add toppings such as some sliced radishes and micro greens such as broccoli and alfalfa sprouts for a lovely fresh avocado on toast.
